by Marijo Phelps 7C diced warm boiled potatoes (could microwave peal or not depending on your preference) 1/3 C chopped chives or scallions 1 tsp salt 1/8 tsp pepper 1 TBSP grated onion (I usually put in more but I am an onion lady!) 1C Good Seasons salad dressing made according to package (Italian, or herb and garlic) C chopped celery C diced cucumber C fat free sour cream C mayonnaise (regular or low fat) Combine potatoes, chives, salt, pepper, onion and C of the Good Seasons salad dressing. Stir well and chill. Combine celery, cucumber, sour cream and mayonnaise. Stir in the remaining C of Good Seasons salad dressing. Chill this mixture too. To serve combine the two mixtures and mix well together. Garnish with salad greens, radishes and additional chopped chives or chopped green onions. This recipe will serve 8 and is delicious with grilled chicken and fresh fruit for dessert. (C) Marijo Phelps all rights reserved. Use with with proper credits.
